One more time!

Its nice to be able to blog close together and not have to worry about people missing one (since the reader tells you how many you've missed) so I'll add a short one here. I am at the tail end of my double now, all I need to do is go to bed and wake up and it'll be over.

Tonight was my regular shift, and it was my turn to cook. This station is a little different than the last one, there are only 3 of us here, and the officer doesn't eat with us, so me and the other guy wind up just taking turns. It is actually tougher to cook for just 2 people, since I wind up buying and making too much food, and if you aren't careful it winds up being way more expensive to cook for just 2, since you can't spread the cost per person out as much (I hope that makes sense, I know what I am trying to say, do you know what I am trying to say?). April was kind enough to bring the ingredients for tonight's dinner to my station on her way out and about on the town today.

One of the benefits though, is that you can do things like steak or shrimp a little more regularly since you don't have to buy as much. Tonight I made a spicy shrimp dish (it was garlic, red pepper, shrimp, spinach, and cherry tomatoes). It turned out really good. I got the recipe from my mom, who got it from an AJC article. I served it with some linguine (it was linguine, bacon, spinach, chicken broth, and onion... that is really good too).




Mine didn't look that good, but it sure tasted good!
Other than that it was a fairly quiet shift. So far we have run only 1 call, and it wasn't a big deal. I hope everyone has a nice end to their weekend, I will be spending mine recouping on the couch! Talk to you later.

That recipe looks GREAT!! I'm glad you are keeping the menu updates coming.
I am planning a big Sunday dinner for Granny today since I skipped church to go collect Uncle Bill from the short bus this morning. I may borrow a few ideas from your description and cook something like you did.
Sounds like your Mom and Dad had a great trip with Bill and Deb. Say hi to them when they call.
